Chicken Marsala

Ingredients
  • chicken, veal or pork tenderloin
  • salt, pepper & flour
  • 2 tbsp. butter
  • ½ lb cremini or baby portabella mushrooms, sliced
  • 1 garlic clove
  • ½ cup marsala wine
  • 1 cup chicken stock
  • 2 tbsp. butter
Steps
  1. Pound meat of choice to tenderize.
  2. Dredge with salt, pepper and flour.
  3. Fry in large sauté pan with olive oil until cooked through. Approx. 3 to 4 minutes per side.
  4. Remove meat from pan, keep warm.
  5. Add 2 tbsp. butter to the pan and sauté mushrooms and garlic until browned.
  6. Make a roe by mixing in some salt, pepper and flour.
  7. Add chicken stock and remaining butter. Mix and heat to a low simmer.
  8. Serve over wide noodle pasta such as pappardelle or fettuccine.
