Ingredients
  • 1 cup yellow corn meal
  • 1 cup sifted all-purpose flour
  • ¼ cup sugar (optional)
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 1 egg
  • 1 cup milk
  • ¼ cup shortening, oil or softened butter
Steps
  1. Preheat oven to 425°.
  2. Sift together corn meal, flour, sugar, baking powder and salt into bowl.
  3. Add egg, milk and oil. Beat until smooth, about 1 minute.
  4. Bake in greased 8" square baking pan or muffin tin 20-25 minutes for pan, 15-20 minutes for muffins.
