- 1 cup yellow corn meal
- 1 cup sifted all-purpose flour
- ¼ cup sugar (optional)
- 4 teaspoons baking powder
- ½ teaspoon salt
- 1 egg
- 1 cup milk
- ¼ cup shortening, oil or softened butter
- Preheat oven to 425°.
- Sift together corn meal, flour, sugar, baking powder and salt into bowl.
- Add egg, milk and oil. Beat until smooth, about 1 minute.
- Bake in greased 8" square baking pan or muffin tin 20-25 minutes for pan, 15-20 minutes for muffins.
