Sultana Cake
Ingredients
  • 400g sultanas
  • 225g butter
  • 2 eggs
  • 350g sugar
  • 350g flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
Steps
  1. Pre-heat oven to 150°C.
  2. Grease and line a 23cm cake tin.
  3. Cover sultanas with water and boil until the liquid is absorbed.
  4. Add butter, stir and cool.
  5. In a large bowl beat eggs and sugar.
  6. Fold in sultana butter.
  7. Fold in sifted flour, salt and baking powder.
  8. Pour into lined cake tin and bake for 1½ hours. (Check after 1 hour with skewer, continue until comes clean)
