Ingredients
- 400g sultanas
- 225g butter
- 2 eggs
- 350g sugar
- 350g flour
- ½ teaspoon salt
- 1 teaspoon baking powder
Steps
- Pre-heat oven to 150°C.
- Grease and line a 23cm cake tin.
- Cover sultanas with water and boil until the liquid is absorbed.
- Add butter, stir and cool.
- In a large bowl beat eggs and sugar.
- Fold in sultana butter.
- Fold in sifted flour, salt and baking powder.
- Pour into lined cake tin and bake for 1½ hours. (Check after 1 hour with skewer, continue until comes clean)
