Dark and Stormy Ginger Bars
Ingredients
  • Ginger bars
  • 10 tablespoons (142g) unsalted butter
  • one 2” piece (20g) fresh ginger, peeled and finely grated
  • ½ cup plus 2 tablespoons (134g) light brown sugar, packed
  • ¼ cup (39g) ginger syrup*
  • 2 teaspoons ginger
  • ¾ teaspoon table salt
  • 1 large egg
  • ½ teaspoon baking powder
  • 1 ¼ cups (150g) King Arthur Unbleached All-Purpose Flour
  • 3 tablespoons (35g) mini diced ginger

  • Frosting
  • 2 tablespoons (28g) unsalted butter, softened
  • 2 ounces (57g) cream cheese, softened
  • pinch of table salt
  • 1 ½ cups (170g) confectioners' sugar, sifted if lumpy
  • zest of ½ lime
  • 1 ½ teaspoons lime juice
  • 2 teaspoons dark rum, optional
  • 1 tablespoon mini diced ginger, for sprinkling
