  • 3 tablespoons (45 ml) olive oil
  • 4 plum tomatoes, diced
  • 1 cup (250 ml) red wine
  • 2 cup (500 ml) baby arugula
  • 1 cup (250 ml) grated Parmigiano-Reggiano cheese
