Spinach and Garbanzo Bean Soup

In July 2014 I discovered the plant based whole food eating lifestyle and have never looked back. I eat no animal products (no meat, dairy, eggs, nada) and really do not even miss it!

1 ½ cup dried garbanzos (soaked overnight)

1 whole garlic head

3 bay leaves

1 yellow onion, diced

3 garlic cloves, minced

1 bunch spinach

2 Yukon Gold potatoes, diced in 1” cubes

1 tsp whole cumin seeds

2 tsp dried Mexican oregano

1 to 2 small dried red chiles, crushed

1 tsp smoked paprika

4 cups vegetable stock

4 cup water

1 lime, juiced

1 tsp sea salt or to taste
