Tea-Rubbed Maple Turkey
Ingredients
  • 6 bags lapsang souchong tea, emptied (9 grams)
  • 1 tablespoon kosher salt
  • 1 teaspoon ground white pepper
  • 1 12- to 14-pound turkey, neck and giblets discarded
  • 4 cups plus 3 tablespoons water, divided
  • 2 tablespoons cornstarch
  • ½ cup pure maple syrup
  • ½ cup strong brewed lapsang souchong tea (see note above)
  • ¼ cup soy sauce
  • 2 tablespoons unseasoned rice vinegar
  • ½ teaspoon ground white pepper
