Ingredients
  • This curry sauce has a few more ingredients than my typical recipes, but it is worth it.
  •  
  • Coconut milk: Use full-fat unsweetened coconut milk for the best flavor.
  • Curry powder: Different brands have different salt levels. You may wish to add the salt last, once you taste how salty your curry is.
  • Olive oil - EVOO, always.
  • Onion and Garlic - For flavor and kick.
  • Grated Ginger - Use fresh ginger root - you can buy it in the produce section of the store. Peel the skin off with the back of a spoon (trust me) and grate using a microplane grater.
  • Sugar - White sugar for a little sweetness.
  • Cinnamon - Adds a little unexpected zest.
  • Salt - See the note on curry powder.
  • Tomato paste - For depth of flavor, richness and color.
  • Chicken stock - To thin out the sauce and add flavor.
