Honey Nut Protein Bars
Ingredients
  • 8 to 10 Medjool dates, pitted
  • 2 ½ cups old fashioned oats, divided
  • 3 tablespoons chia seeds
  • 3 tablespoons flaxseed meal
  • 3 tablespoons hemp seeds
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • 2 large eggs
  • ¼ cup coconut oil, melted plus additional for greasing
  • ½ cup honey
  • ½ cup walnuts or pecans, chopped
  • ½ cup raw pepitas
  • ⅓ cup dark chocolate, melted to garnish (optional)
