Ingredients
  • 6 rice paper small size (mine were 22cm wide Vietnamese rice paper)
  • 2 tsp oil
  • ½ cup carrots diced
  • 1 stalk celery diced
  • 1 tbsp garlic minced
  • 1 cup mushrooms diced
  • 1.5 tbsp soy sauce or gluten-free alternative
  • 1 tbsp vinegar
  • 1.5 tbsp mirin (optional)
  • 50 grams soy curl crumbles or ½ block Firm Tofu for protein, break up the soy curl pieces into smaller crumbles or crumble the tofu with hands
