Almond Flour Muffins - Paleo

Ingredients
  • Double it for 8 muffins.  Cut it in half for 2...add your own ingredients for a variety...I add strawberry preserves
  • 1 cup
  • 2 large eggs
  • 1 tbsp honey or preferred sweetener
  • ¼ teaspoon baking soda
  • ½ teaspoon apple cider vinegar
Steps
  1. 1. In a medium bowl, combine almond flour and baking soda
  2. 2. In a large bowl combine eggs, honey, and vinegar
  3. 3. Stir dry ingredients into wet, mixing until combined
  4. 4. Scoop about ¼ cup of batter at a time into a paper lined muffin pan
  5. 5. REGULAR OVEN: Bake at 350°F for 15 minutes, until slightly browned around the edges
  6. 6. CONVECTION OVEN: Bake at 325°F for 15 to 20 minutes, until slightly browned around the edges
  7. 7. Cool in the pan for ½ hour
  8. 8. Serve with butter and jam
Notes
  • - A wonderful template for a muffin recipe.  You can experiment by adding different flavor combinations including: date, walnut, lemon poppyseed, dried cranberries with white chocolate chips, cinnamon raisin, and orange dark chocolate chip.
