Strawberry and Blueberry Cobbler

Ingredients
  • 2 cups of strawberries - fresh or frozen
  • 1 cup of Blueberries - fresh or frozen
  • ¼ cup white sugar
  • 3 Tablespoons cornstarch
  • ½ tsp nutmeg
  • ½ tsp vanilla
  •  
  • 1 cup all-purpose flour
  • ¾ cup old fashioned roll oats
  • ¼ cup white sugar
  • ⅓ cup brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted (1 stick)
Steps
  1. Preheat oven to 350⁰ F
  2. Spray an 9x9 inch square pan with non-stick cooking spray.
  3. Hull Strawberries & cut in half or quarter.
  4. In a small bowl toss strawberries, blueberries, ¼ cup sugar & cornstarch together. Add nutmeg and vanilla and mix.
  5. Place berries into prepared pan.
  6. In a separate bowl, mix flour, oats, ¼ cup white sugar, brown sugar, cinnamon and salt.
  7. Add melted butter and mix well.
  8. Pour oatmeal mixture on top of berries.
  9. Bake for 35 minutes or until topping is golden and berries are bubbly.
  10. Top with vanilla ice cream and enjoy!
Notes
  • If using frozen berries, add an extra 1 T of cornstarch to berry mixture.
