Pork with Rice and Black Beans
Youngest two don't care for it at this time (August 2021)
Ingredients
  • Nothing beats using your own fresh produce or materials around the house.

  • 200 g (1 cup) basmati rice
  •  
  • Pinch of salt

  • 1 tablespoon olive oil
  •  
  • 1 onion, finely chopped

  • 2 garlic cloves, crushed

  • 1 small red capsicum, core and seeds removed, cut into 1 cm cubes
  •  
  • 1 teaspoon ground cumin
  •  
  • ½ teaspoon smoked paprika
  •  
  • ¼ teaspoon chilli powder (optional)
  •  
  • 600 to 700 g minced pork, preferably free-range
  •  
  • 400 g tinned diced tomatoes
  •  
  • 400 g tinned black beans or kidney beans, drained and rinsed
  •  
  • 2 corn cobs, husk and silk removed
  •  
  • 2 tablespoons finely chopped coriander (optional)
