Vegan & Gluten-Free Asian Inspired Tofu Scramble
Ingredients
  • ¼ cup cashews, lightly roasted
  • 540 g extra-firm tofu, drained, crumbled to bite size
  • 4 carrots, peeled and chopped
  • 1 tbsp canola oil
  • 3 tbsp tamari, or Japanese soy sauce
  • 1 tbsp liquid concentrated mushroom broth, pure from the bottle
  • ½ green onion, finely chopped
  • 1 tbsp apple cider vinegar
  • 2 tsp raw sugar
  • ½ tsp sea salt
  • 1 dash black pepper, freshly ground
  • 1 tbsp toasted sesame oil
  • ½ green onion, finely sliced, for garnish
  • 1 dash sesame seeds, for garnish
