Quinoa, Bean and Vegetable Burgers
Ingredients
  • ⅓ cup quinoa
  • ⅔ cup vegetable stock or water
  • 1 (19 oz./540 mL) can black beans, drained, rinsed and drained well again
  • ⅔ cup coarsely grated carrrot
  • ⅔ cup coarsely grated zucchini
  • 1 large garlic clove, minced
  • 1 tsp. ground cumin
  • ½ tsp. dried oregano
  • ½ tsp. salt
  • ⅔ tsp. cayenne pepper
  • ⅓ cup dried bread crumbs
  • 1 Tbsp. Dijon mustard
  • 1 large egg
  • 3 Tbsp. olive oil
  • 6 hamburger buns, split and warmed
