Red Lentil and Vegetable Soup
Ingredients
  • 1 large onion, diced
  • 3 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 large potato, peeled and diced
  • 1 large piece pumpkin, diced
  • 1 broccoli stalk, diced
  • ½ teaspoon garlic powder
  • 2 tablespoon tomato paste
  • 2 teaspoon ground cumin
  • 1 teaspoon curry powder
  • 2 bay leaves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: pinch of cayenne, chili powder and/or coriander seed
  • 8 cups water
  • 2 tablespoons vegetable/chicken stock powder
  • 1 cup red lentils
  • 5 frozen spinach lumps
  • OPTIONAL
  • Cook 1 cup green or brown lentils and add with spinach
  • Chopped parsley or coriander to serve
  • Cream or coconut cream to serve
