Ethiopian Split Peas
Ingredients
  • 1 onion, diced
  • 6 to 8 roma tomatoes, diced
  • 3 to 4 T minced garlic (lots!)
  • 2 veggie bouillon cubes
  • ~ΒΌ C berbere spice
  • 1 T cumin
  • 2 T smoked paprika
  • 1 package split peas
  • 7 cups water
Steps
  1. In a pressure cooker, saute onions until tender. Add tomatoes and cook for a few minutes. Add all spices and bouillon and cook until fragrant (1 to 2 minutes). Stir in peas then add water.  Bring up to high pressure and cook for 10 minutes. Remove from heat and let pressure release naturally. If pressure remains after 10 mins, quick release.
