Ingredients
  • 4 lb + Roast brought to room temp
  • 4 garlic cloves
  • 1 TBSP salt
  • 1 TBSP pepper
  • 1 onion, sliced
  • 1 cup water
Steps
  1. Preheat oven to 500°
  2. mix together the salt and pepper and rub the roast and the slits for the garlic
  3. insert the garlic cloves, cover the roast and bottom of pan with the onions
  4. sear at 500° for 20 minutes
  5. add hot water
  6. reduce temperature to 275°
  7. 20 minutes per pound for rare
