How to Make a Yuba Reuben
Ingredients
  • subheading: For the yuba:
  • ½ cup cooked beet, sliced into chunks
  • One tablespoon allspice berries
  • One tablespoon peppercorns
  • One tablespoon coriander seed
  • One tablespoon mustard seed
  • One tablespoon red pepper flakes
  • Two tablespoons liquid smoke
  • Two teaspoons salt
  • ¼ cup brown sugar
  • Six cloves garlic, thinly sliced
  • One tablespoon tomato paste
  • 1 tablespoon soy sauce
  • 1 teaspoon miso
  • Two cups water
  • Five cups (approximately 20 oz Yuba) (see here)
  • subheading: For the Russian dressing:
  • One cup cashews (soaked overnight or briefly boiled to soften)
  • ½ cup water
  • ½ cup ketchup
  • ¼ cup sweet relish
  • Two tablespoons prepared horseradish
  • ½ cup finely diced white onion
  • 2 teaspoons apple cider vinegar
  • subheading: For assembly:
  • Rye bread
  • Olive oil or vegan butter
  • Sauerkraut
  • Vegan cheese (optional)
