Ingredients
- subheading: For the massaman paste:
- 1 brown onion, roughly chopped
- 4 garlic cloves, peeled
- 3 long red chillies, roughly chopped
- 3cm piece ginger, peeled and roughly chopped
- 1 lemongrass stalk, roughly chopped
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- ¼ cup roasted peanuts
- 2 tbsp coriander roots and stems, roughly chopped
- 1 tbsp ground cumin
- 2 tsp ground coriander
- subheading: For the curry:
- 2 tbsp vegetable oil
- 1kg chuck steak, diced into 5cm cubes
- 50g cornflour
- 500ml beef stock
- 400g can coconut milk
- 500g cocktail potatoes, halved
- 2 tbsp brown sugar, to taste
- 1 lime, zest and juice, to taste
- Sea salt and pepper, to taste
- Jasmine rice, sliced chilli, coriander and peanuts, to serve
