Slow Cooked Beef Massaman Curry
Ingredients
  • subheading: For the massaman paste:
  • 1 brown onion, roughly chopped
  • 4 garlic cloves, peeled
  • 3 long red chillies, roughly chopped
  • 3cm piece ginger, peeled and roughly chopped
  • 1 lemongrass stalk, roughly chopped
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • ¼ cup roasted peanuts
  • 2 tbsp coriander roots and stems, roughly chopped
  • 1 tbsp ground cumin
  • 2 tsp ground coriander
  • subheading: For the curry:
  • 2 tbsp vegetable oil
  • 1kg chuck steak, diced into 5cm cubes
  • 50g cornflour
  • 500ml beef stock
  • 400g can coconut milk
  • 500g cocktail potatoes, halved
  • 2 tbsp brown sugar, to taste
  • 1 lime, zest and juice, to taste
  • Sea salt and pepper, to taste
  • Jasmine rice, sliced chilli, coriander and peanuts, to serve
