IP Beans - White Sausage Chili
Ingredients
  • 1 lb spicy ground pork sausage
  • 1 small onion, minced
  • 1 tablespoon minced garlic
  • 2 teaspoons cumin powder
  • 2 teaspoons chili powder
  • 1 cup chunky carrots
  • 3 cups water
  • 1 cup dry white beans
  • 1 (10 oz) can of diced tomatoes with lime and cilantro
  • 1 (4 oz) can green chilies
  • ¼ cup nutritional yeast
  • 1 teaspoon dried oregano
  • salt and pepper, to taste
Steps
  1. Saute ground pork sausage and drain excess fat
  2. Add 1 small diced onion and saute until slightly caramelized
  3. Add 1 tablespoon minced garlic and saute until slightly brown
  4. Add cumin powder, chili powder, and salt, and stir to distribute
  5. Add carrot, water and sorted beans
  6. Cook on high for 40 minutes (Carrots will be mushy)
  7. After NPR, add diced tomatoes (with lime and cilantro), chilies and nutritional yeast
  8. Add additional salt and pepper to taste
  9. Serve with sour cream and additional cilantro if desired
