Instant Pot Pumpkin Bread (GF, DF)
Ingredients
  • In mixer whip up:
  • 4 eggs small or 2 large
  • 1/2c sugar
  • 1/2c maple syrup
  • 1/2c melted coconut oil
  • 2 tbspn pumpkin spice
  • 1 tspn vanilla
  • 1 pinch salt
  • 1 15oz can pumpkin
  •  
  • The add in dry ingredients:
  • 1c rice flour
  • 3/4c almond flour
  • 1/2c tapioca flour
  • 1 tspn baking soda
  •  
  • Finally mix in
  • 1c chocolate chips
Steps
  1. Transfer ingredients to greased bowl or springform pan that fits in your pressure cooker.
  2. Place on trivet with at least 1c of water under the trivet.
  3. Settings:
  4. 50 minutes
  5. Manual pressure
  6. 10 minutes natural pressure release
  7. Remove from pot and let cool 10 minutes.
  8. Scrape sides of bowl with knife then flip upside down to get out of bowl.
