Pearl's AIP Adobo Chicken
Ingredients
  • Easy AIP Adobo
  • subheading: Recipe (there's a ton of ways to do this, but I made the easiest one):
  • subheading: In a pot, dump:
  • -½ or whole head garlic, smashed/minced (I smash, throw in with peel)
  • -a pinch or 2 bay leaf
  • -½ c acv
  • -½ c coconut aminos
  • -salt later to taste
  • -2 lbs pork (I used shoulders) or chicken
  •  
  • Cabbage
  • Carrots
  • Green onions
  • Cauliflower, riced
Steps
  1. This meal combo makes my husband and daughter love me more. If they don’t, I just smack them on the head, and they can be hungry.
  2. Very easy AIP. Chicken wings adobo using coconut aminos, acv, garlic, and bay leaf. Using the sauce from the cooked chicken, I sautéed garlic, onions, cabbage and carrots. It was a wipe out! I had to save 3 pieces for lunch next day. They’d be happy if I cooked this once a week.
  3. *salt everything
  4. Boil, then simmer covered for 30 mins. Then, simmer uncovered until meat is tender, & sauce has thickened a bit. This intensifies the flavors. Top with green onions. Serve with cauli rice or steamed leafy greens. Great in salads too.
  5. Optional: Marinate in same ingredients. Boil and simmer until tender. Pan fry meat, pour sauce on top, and simmer until liquid almost gone. Super yummy!
