Creamy Vegan Ranchero Pasta
Ingredients

  • ¼ Cup Lime juice
  • 2 Tablespoons Olive oil
  • 1 Tablespoon Soy sauce or Tamari
  • 6 Cloves Garlic, chopped
  • 1 teaspoon Salt
  • 1 teaspoon Cane sugar
  • ½ teaspoon Cumin
  • ½ teaspoon Black pepper
  • ¼ teaspoon Cayenne pepper

  • 1 Cup Raw cashews, soaked*
  • 16 Ounces Pasta of choice, vegan
  • ½ a White onion, roughly chopped
  • 1 Fresh jalapeno, de-seeded and chopped
  • 1 Chipotle in adobo
  • 2 Cloves Garlic
  • ½ Cup Vegetable broth
  • 1 Can(28oz) Crushed tomatoes
  • 2 Tablespoons Lime juice
  • ¼ Cup Cilantro, fresh
  • ½ teaspoon Paprika
  • ½ teaspoon Oregano, dried
  • A few pinches of Salt and pepper
