  • 4 large egg yolks (2.1 oz / 60g)
  • ¾ cup sugar (5.3 oz / 150g)
  • ½ cup fresh orange juice (4 oz / 113g), from about 1 large orange
  • 3 tablespoons fresh lemon juice
  • ½ teaspoon ground cardamom
  • ½ teaspoon kosher salt or ¼ teaspoon table salt
  • 1 pound (454g) frozen mango chunks (about 4 cups)
  • ½ cup plain whole-milk Greek yoghurt (4.2 oz / 120g)
  • 2 cups heavy cream (16 oz / 480g), chilled
