4 cups water

2 teaspoons salt

4 tablespoons unsalted butter cut into several pieces

2 cups half and half plus more if needed

1 cup Cheddar Jack cheese shredded, plus more for serving (we ended up using another 1 to 2 tablespoons per bowl)

Salt and pepper to taste
