  • 1 ½ cups light brown sugar packed
  • 2 large egss at room temperature
  • ¼ cup golden syrup
  • ¼ cup molasses
  • 1 ½ teaspoon vanilla extract
  • 1 teaspoon freshly grated ginger
  • 1 cup buttermilk
  • 1 cup diced pears 2 to 3 pears, more unripe than too ripe.

  • 1 cup sifted powder sugar
  • ¼ teaspoon ground cinnamon
  • Pinch of cloves
  • 1 tablespoon of bourbon or dark rum
  • 1 tablespoon orange juice
  • 2 tablespoons milk

  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ⅓ cup water
  • ⅛ teaspoon citric acid or 1 ½ teaspoons lemon juice
