  • 2 cups low sodium beef broth (or chicken broth)
  • 8 ounces dry mini lasagna noodles (see note below)
  • 1 cup shredded mozzarella cheese , divided
  • ¼ cup freshly grated parmesan cheese , divided
  • ¾ cup ricotta cheese
  • fresh chopped parsley , for serving
