Creamy Spinach + Mushroom Quinoa "Risotto"
Ingredients
  • 3.5 oz dried porcini mushrooms
  • 2 cups boiling water
  • 1 cup white quinoa (uncooked)
  • 1 tablespoon olive oil
  • 1 shallot, diced
  • 3 garlic cloves, minced
  • 2 cups chopped mushrooms (any variety)
  • 1 teaspoon miso paste
  • 1 cup spinach
  • ½ cup vegetable broth (+ more if needed)
  • 1 tablespoon nutritional yeast
  • Salt + pepper to taste
  • Red pepper flakes (optional for added heat)
