Shrimp with Zucchini
From Madhur Jaffrey's Indian Cooking cookbook
Ingredients
  • ¾ pound zucchini
  • 1 ¼ teaspoon salt
  • 1 pound shrimp, peeled and deveined
  • 5 tablespoons vegetable oil
  • 6 cloves garlic, peeled and very finely chopped
  • 3 small canned tomatoes, finely chopped plus ½ cup of the tomato liquid
  • 1 cup finely chopped fresh coriander
  • 1 fresh hot green chile, finely chopped
  • ½ teaspoon ground turmeric
  • 1 ½ teaspoons ground cumin seeds
  • ¼ teaspoon cayenne
  • 1 teaspoon very finely grated fresh ginger
  • 1 tablespoon lemon juice
