  • 1 yellow onion, diced
  • 5 cloves garlic, minced
  • 4 medium carrots, diced (about 2 cups)
  • 5 ribs celery, diced (about 2 cups)
  • 2 cups diced mushrooms
  • 2 teaspoons sea salt, divided
  • 1 14-ounce can coconut milk
  • 2 pounds grass-fed ground beef
  • 2 tablespoons minced fresh rosemary
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ cup bone broth or water
  • ½ lemon, juiced
  • Fresh chives, for garnish
