Mexican Egg Casserole
Ingredients
  • 10 Eggs, beaten
  • 1 stick butter, melted
  • ½ cup flour
  • 1 tsp baking powder
  • 1 8 oz can green chilies
  • 2 cups cottage cheese
  • 16 oz shredded Monteray Jack cheese
  • Salsa
Steps
  1. Beat eggs with butter in bowl.
  2. Add flour and baking powder, mix well.
  3. Stir in green chilies, cottage cheese, and Monteray Jack cheese.
  4. Spoon into greased 9 x 13 baking dish.
  5. Bake at 400 degrees for 15 mins.
  6. Reduce heat to 350 degrees and bake for 35 mins longer.
  7. Serve with salsa.
