Vegetarian onion soup topped with Portobello
Vegetarian onion soup using Portobello Mushrooms instead of toast
Ingredients
  • 3 sweet onions sliced thin
  • Oil
  • Mustard
  • Wine
  • Garlic minced
  • Salt pepper
  • Flour
  • Wine or water
  •  
  • 4c veg broth
  • Package of sliced mushrooms
  • Wine
  •  
  • Large Portobello mushrooms
  • Cheese
Steps
  1. Slice onion & caramelize with oil until brown 15 to 20 min) Add garlic & some wine
  2. Add flour 1 to 2T to the onions
  3. Broth &mushrooms in a pot and cook for about 10 min
  4. Roast large Mushrooms with balsamic vinegar
  5. Put soup together-
  6. put onion mix in broth
  7. Deglaze pan with water or wine
  8. Thicken soup if needed
  9. Cheese in large mushrooms
  10. Broil balsamic mushrooms until cheese melts
  11. Place on top of soup to serve
