Asian Vegetable Stir-Fry Noodles
Ingredients
  • 330 kcal
  • 120g linguine or rice/egg noodles
  • ½ tbsp (sesame) oil
  • ½ tbsp fresh ginger grated
  • 2 to 3 garlic cloves minced finely
  • 100 g fresh mushrooms chopped or 12 g dried (re-hydrated in water)
  • 1 carrot finely chopped
  • ½ red pepper finely chopped
  • ½ medium courgette, finely chopped
  • ½ tsp onion powder
  • ¼ tsp smoked paprika
  • Salt and black pepper to taste
  • Spring onion to garnish
  • Sesame seeds to garnish
  • subheading: Sauce:
  • 80 ml vegetable stock or water
  • 2 to 3 tbsp tamari or soy sauce (mixture of light and dark)
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup or more to taste
  • ½ tbsp cornflour
  • 1 pinch of red chilli flakes (optional)
