Butternut Squash Alfredo Pasta
Ingredients
  • 1 small butternut squash (1.5 lb)

  • ½ lb uncooked pasta (such as rigatoni)
  • ½ cup milk (any kind, I used 2%)
  • ¼ cup half and half (or substitute milk for a lower-calorie option)
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh basil leaves , chopped

  • ½ cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
