  • 250 grams (1 cup) milk, scalded and cooled to room temperature
  • 2 teaspoons salt
  • 2 eggs
  • 1 tablespoon anise seeds
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground mahleb (also spelled mahlab)
  • 1 teaspoon orange blossom water (seen note above)
  • 85 grams (6 ½ tablespoons) butter, softened
  • subheading: For the glaze:
  • 1 egg, beaten
  • 1 tablespoon water
  • pinch each of sugar and salt
  • Handful of pistachios, shelled and roughly chopped
