Pumpkin Baked Oatmeal Cups
  • 1 cup quick oats, organic preferred
  • ¼ teaspoon kosher salt
  • ½ teaspoon baking powder
  • 1 ½ to 2 teaspoons ground pumpkin spice
  • 1 cup plus ½ tablespoon almond milk, or milk of your choice
  • 1 teaspoon vanilla extract
  • 2 large eggs, beaten
  • ⅓ cup plus 1 ½ tablespoons low fat 2% plain Greek yogurt, (I like Fage)
  • ¼ cup pumpkin puree
  • 6 tablespoons brown sugar or monk fruit sweetener
  • 1 tablespoon powdered sugar
