Chicken with Anchovies
I love to serve roasted potatoes to soak up the delicious sauce and a simple romaine salad alongside.
Ingredients
  • 2 tablespoons extra-virgin olive oil
  • About 2 pounds of chicken thighs (bone-in; skinless)
  • 3 cloves garlic, diced
  • 1 tin anchovies ( 2 ounces), chopped
  • ¼ cup balsamic vinegar
  • 2 tablespoons capers (rinsed if packed in salt; drained if packed in vinegar)
  • ½ cup dry white wine (can substitute chicken stock)
  • Kosher salt
  • Black pepper
