Garden Focaccia
Ingredients
  • 2 cupswarm tap water (about 110 F)
  • 1 packageactive dry yeast (2¼ teaspoons)
  • 3 tablespoonsgranulated sugar
  • ½ cupextra virgin olive oil, plus more for greasing and topping
  • 5 cupsall-purpose flour, plus more for dusting
  • 1 tablespoonkosher salt

  • Vegetables: grape tomatoes, red onions, shallots, pitted and halved kalamata olives, capers, carrots, bell peppers, zucchini, yellow squash, garlic cloves, asparagus, thinly sliced or partially cooked baby white and purple potatoes
  • Herbs: scallions, chives, parsley, basil, rosemary
  • Fruit: peaches, plums, pears, apricots, figs, apple slices, grapes, blueberries, strawberries
  • Other: sliced almonds, chopped walnuts, pine nuts, black or white sesame seeds, poppy seeds, ground paprika or turmeric, dried citrus slices or peel, grated or sliced cheeses

  • Chewy and olive oil-enriched focaccia bread is the perfect edible art canvas for a colorful design of your own making. Garden Focaccia (also known as "focaccia gardens," "art focaccia" and "Van Gogh focaccia") are thought to have been popularized by Massachusetts home baker Terri Culletto, who first shared the colorful creations on her Instagram.
  • TECHNIQUE TIP: Choose fruits and vegetables that aren't too high in water like mushrooms. Be careful not to cut things too thinly or they might burn. Dip herbs in water first to preserve them a little longer in the heat of the oven. You can use spices like paprika or turmeric to "paint" the dough.
  • SWAP OPTIONS: This can be made with fresh from-scratch dough or you can swap in store-bought pizza dough.
