Grilled Chimichurri Chicken Avocado Salad
Real Chimi is made with red wine viniger, olive oil, parsley ,cilantro, oregano, lemon AND lime juice, garlic, red onion, red pepper flakes, salt and sugar. Then you let it sit in a jar for 2-3 days, shaking it up once a day. I like mine smooth so i use a food processor, if you like it chunky cut it by hand and mix it in a bowl.
Ingredients
  • One batch Authentic Chimichurri
  • 4 skinless chicken thigh fillets , (no bone) or chicken breasts
  • 1 teaspoon olive oil
  • 5 cups Romaine (or cos) lettuce leaves, washed and dried
  • 3 ripe tomatoes , sliced
  • ½ a red onion , sliced
  • 2 avocados , sliced
  • Fresh parsley leaves , to garnish
