Oat and Courgette Pang Cakes from The Little Green Kitchen
‘PANG CAKES!’ is our son’s most common answer when asked what to put in his lunchbox for his Friday forest hike with preschool. He means small, thick American-style pancakes, and because they’re on repeat, we try to mix up the recipe for variation. We often make spinach pancakes from our Green Kitchen at Home book. Unlike that, this version has courgette grated through, but the best thing is how simple they are, with oats as the only grain. They take five minutes to prep and five minutes to fry, so they are totally doable even on a stressful morning.

Ingredients
  • subheading: For the Pang Cakes:
  • 2 eggs
  • 1 banana, peeled and roughly chopped
  • 100 g (3½ oz/1 cup) rolled oats
  • 2 tbsp milk of choice
  • ½ tsp sea salt
  • ¼ tsp baking powder
  • ½ courgette (zucchini) (100 g/3½ oz), top removed and coarsely grated
  • coconut oil or butter, for frying
  •  
  • subheading: Other lunchbox items:
  • sliced yellow (bell) peppers
  • cherry tomato skewers
  • sliced pears
  • dried apricots (preferably without sulphur dioxide)
  • cashew nuts
Steps
  1. Crack the eggs into a blender.
  2. Add the banana and the other ingredients, except the courgette and oil, and mix until completely smooth. Stir the courgette through the batter with a spoon.
  3. Heat a little oil in a large non-stick frying pan (skillet) over medium-high heat.
  4. Pour a few tablespoons of the batter for each pancake into the pan and fry for a minute until golden underneath and small bubbles appear on the surface.
  5. Carefully flip each pancake with a spatula and fry on the other side for a further minute or until golden.
  6. Repeat with the rest of the batter.
  7. Once cooked, remove from the heat and set aside to cool completely.
  8. Wrap in parchment paper or reusable food wraps, and pack in a lunchbox along with the other items.
Notes
  • A helping hand:
  • Let the kids grate the courgette on the box grater. If you feel comfortable letting your kids handle a frying pan, they can also flip the pancakes (supervised, of course!). The first ones are always a little wobbly but after that they are quite firm and easily flippable.
