Ingredients
- subheading: Base:
- 500g chicken breast fillets
- 120g hard Mozzarella Cheese (not fresh)
- 2 medium eggs (US large)
- 1tsp Herbes de Provence
- salt and peeper to taste
- 2 tbs oil
Steps
- Cut chicken breast in a large chunks and boil them in a salted water for around 15 minutes. Do not crowd them - you need your chicken properly boiled through. Put the chicken aside to cool down.
- Preheat oven to 200C.
- Dice the cheese.
- In a food processor put one part cheese and one part chicken - pulse until it resembles flour. Do it until all chicken and cheese is processed.
- In a large bowl mix your chicken, cheese, salt, pepper and the herbs. Add 2 raw eggs and mix really well. Divide the mixture into 2 equal parts.
- Brush your oven tins with oil, press the dough into them and then brush the top again with oil.
- Pre-bake "the dough" for 12 minutes.
- You are ready do add your pizza toppings.
