Shrimp and Spinach Pasta (Easy One-Pot Pasta)
Ingredients
  • 1 tablespoon extra virgin olive oil, or enough to coat the bottom of your skillet
  • 1 cup diced yellow or white onion
  • 1 teaspoon minced garlic
  • 2 cups low sodium chicken or vegetable broth
  • 14.5 ounce can diced tomatoes
  • 8 ounces tomato sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes
  • ¼ teaspoon salt
  • freshly ground black pepper
  • 10 ounces dry uncooked penne pasta
  • ⅓ cup half and half or heavy cream
  • ½ cup freshly grated Parmesan cheese, divided
  • 1 pound raw shrimp, extra large (26 to 30) or large (31 to 40), peeled, deveined, tails removed (if frozen, thaw completely before beginning)
  • 5 ounces fresh baby spinach
