Roasted Red Pepper & Pumpkin Hummus
Ingredients
  • Canned chickpeas
  • 200 g
  • 1 large capsicum
  • 300 g
  • Japanese (Kabocha) pumpkin (spaghetti squash or butternut pumpkin - see buying tips)
  • 400 g
  • 2  Tbsp olive oil
  • 1  Tbsp garlic-infused olive oil
  • 1  Tbsp water
  • 3  Tbsp lemon juice
  • 1½ tsp ground cumin
  • Salt and pepper, to season
  • Dry chilli flakes, to taste, optional
