"Cheesy" Vegan Kale Salad with Farro (Vegan)

  • 1 small red onion, minced
  • 3 cups cherry tomatoes, quartered
  • ⅓ cup sliced almonds, toasted
  • ½ cup fresh parsley, chopped
  • ½ tsp Kosher salt
