Asian Rice Bowl with Peanut Ginger Sauce
Ingredients
  • 2 to 3 cups brown rice cooked, or you can use quinoa too
  • 1 cup sugar snap peas
  • ⅓ cup green onions sliced thinly
  • ⅓ cup carrots shredded or sliced thinly
  • ⅓ cup red pepper seeded, sliced thinly
  • ½ cup broccoli frozen, chopped, cooked
  • 4 Tbsp natural peanut butter smooth
  • 3 Tbsp water
  • 1 tsp rice vinegar
  • ½ tsp lime juice
  • 2 tsp soy sauce or low sodium tamari
  • crushed red pepper dash
  • 1 tsp ginger juice or 1 tsp fresh ginger minced
