Ingredients
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 1 ¾ tsp creole seasoning, divided
  • 2 cloves garlic, finely chopped
  • 1 4 oz. can diced green chiles
  • 1 ½ tsp cumin
  • 1 tsp dried oregano
  • ¼ to ½ tsp red pepper flakes
  • 32 oz. low-sodium chicken broth
  • 2 15 oz. cans Great Northern beans, drained and rinsed*
  • 3 boneless chicken breasts
  • 2 tbsp chopped cilantro
  • juice of ½ lime
  • Optional for serving: tortilla chips, shredded cheese, sour cream
  • note: You can add 3 cans of beans instead of 2 for a little thicker soup.
