Low Fodmap Easy Peasy Beef Stew
Ingredients

  • 1 tbsp   olive oil
  • 1 tbsp   garlic infused oil*
  • 600 g   beef chuck steak
  • 400 g   plain crushed/chopped tomatoes (canned)*
  • 3 tbsp   tomato paste
  • 240 g (2 large)   carrot (peeled & roughly chopped)
  • 250 ml (1 cup)   low FODMAP chicken stock (GF as needed)*
  • 60 g (¾ cup)   leek (green tips only, roughly sliced)*
  • 1 tsp   dried oregano*
  • 1   dried bay leaves
  • 1 tsp   dried basil*
  • 2 tsp   gluten free cornflour (corn starch) (dissolve in cold water before adding)*
  • 2 tsp   lemon juice (squeeze of)*
  • Season with   salt & pepper
  • 8 slices   gluten free bread*
