Mark Bittman's Dry Rub for Country Style Ribs
Ingredients
  • Preheat your Gas Grill on high for at least 10 minutes. You want your grill to be hot.
  • 1½ to 2 tsp salt
  • 1 Tbsp sugar (if you're basting with a sweetened BBQ sauce I eliminate this)
  • 2 tsp freshly ground black pepper
  • 2 tsp ground cumin
  • 2 tsp dried mild ground chile powder (any kind you like)
  • 2 tsp good quality paprika (I love McCormick Gourmet Collection "Smoked Paprika")
  • 6 to 8 meaty pork ribs Country Style Bone-In cut. You may have to ask your butcher to cut you some.
