02 steve potato scallops Fully loaded 5 cheese

Ingredients
  • 8 to 12 Red/yellow potatoes 8
  • ¼ cup Feta cheese
  • 1 or 2 cups "roughly" equal parts of shredded Jack/Swiss/sharp cheddar/ parmesan cheese or 2 pre shredded cheese mix bags
  • 1 jar of 3 to 4 Cheese Alfredo sauce (buy only 1 bag of shredded cheese if your using Alfredo sauce)
  • 3 garlic cloves
  • ¼ tsp of salt
  • ¼ tsp of pepper
  • ¼ tsp of graduated garlic
  • 1 tbsp of dried minced onion
  • 2 tbsp of unsalted butter (Not needed if you use Alfredo sauce)
  • ½ cup of heavy creamm (Not needed if you use Alfredo sauce)
  • sour cream
  • 1lb of thick cut bacon
  • 5 to 6 whole green onion sliced
  • Smart squeeze butter
Steps
  1. Red potatoes cleaned and scrubbed.. skin left on when cubed ½"x¾" or sliced to ⅛ to ¼"
  2. In a large cooking Pot add your perp potatoes ..add water 1" above your potatoes line. add salt, pepper, granulated garlic and dry minced onions then sir.
  3. Bring to boil and drop temp to med to Lightly blanch or simmer till half way cooked 10 to 25 mins depending on size. Do not cook fully!!! Half way only let the seasoning work its magic.  check every five minutes, grab a piece of potato and do a bend test. marking sure its just before it breaks... then drain (may have to rinse under cold water to stop the cooking process)
  4. Alfredo sauce: place potatoes back into large pot and add one whole jar of Alfredo sauce. sir and then add 1 bag of shredded cheese mix and feta chesese and mix place mixture in a baking pan top with reserve cheese before placing in oven.
  5. Bake at 350 degree for about 30-1hr covered with aluminum foil for 30mins. Then uncovered for the remaining time to Brown the top. At this time Check if your potatoes are done if already to your Liking. turn oven to boil to Brown top instead of baking the remaining time... Take out and coarsely mix with spoon/ fork. Then pat everything down flat
  6. (disregard next steps if you used alfredo sauce 7 to 11)
  7. No Alfredo sauce: In a large pan add 2 tbsp of butter and fresh garlic (peeled and minced) bring heat up slowly. let garlic caramelize (do not burn... it will taste bitter) Now add heavy cream and reduce to thick glaze
  8. turn off heat add 1 bag/1cup of shredded cheese and Feta cheese and lightly fold Now add drained potatoes too pan and mix to coat..and set aside (remember heat is off) Now grab your roasting pan
  9. Step 1:Then begin layering the potatoes at the bottom. ¼"-½" thick
  10. Step 2: then add cheese mix...a thin even layer... (also reserve ¼cup of the chess mix)
  11. Now repeat step 1 and 2 till all the potatoes and cheese is used up except for the ¼ cup reserve you set aside.
  12. When your done, top the dish with the reserve cheese before placing in the oven...
  13. Bake at 350 degree for about 30-1hr covered with aluminum foil for 30mins. Then uncovered for the remaining time to Brown the top. At this time Check if your potatoes are done, if already to your Liking. turn oven to boil to Brown top instead of baking the remaining time... Take out and coarsely mix with spoon/fork. Then pat everything down flat
  14. Cook beacon and coarsely chop, slice green onion
  15. Top dish with Sport squeeze butter, bacon that has been coarsely chopped with a light sprinkle of sharp cheddar cheese... and sliced green onion... with sour cream on the side for a Final topping by your guess...
